Tortilla soup

Ingredients
- 1 kg Roma tomatoes, cut into wedges
- 2 onions, cut into wedges
- 3 garlic cloves, peeled
- 2 chillies of your choice
- 1 Tbsp chipotle
- 1 tsp oregano
- 1.5 L vegetable broth
- Salt and pepper to taste
- Avocado oil
Steps
- Cut the tomatoes and onions and char them.
- Char the garlic and seeded chillies.
- Let cool and blend everything together.
- Heat a medium pot; once hot, add 2 Tbsp avocado oil.
- Add the blended tomato sauce and season with salt and pepper.
- Add chipotle and oregano.
- Cook for 5 minutes, then add the vegetable broth.
- Let bubble for 10 minutes.
- Adjust seasoning (salt, pepper, oregano, or more chipotle).
- Cut tortillas into strips.
- Serve with lime, avocado, fresh cheese, cilantro, and lightly charred ancho chilli cut into strips.
