Tortilla soup

Ingredients

  • 1 kg Roma tomatoes, cut into wedges
  • 2 onions, cut into wedges
  • 3 garlic cloves, peeled
  • 2 chillies of your choice
  • 1 Tbsp chipotle
  • 1 tsp oregano
  • 1.5 L vegetable broth
  • Salt and pepper to taste
  • Avocado oil

Steps

  1. Cut the tomatoes and onions and char them.
  2. Char the garlic and seeded chillies.
  3. Let cool and blend everything together.
  4. Heat a medium pot; once hot, add 2 Tbsp avocado oil.
  5. Add the blended tomato sauce and season with salt and pepper.
  6. Add chipotle and oregano.
  7. Cook for 5 minutes, then add the vegetable broth.
  8. Let bubble for 10 minutes.
  9. Adjust seasoning (salt, pepper, oregano, or more chipotle).
  10. Cut tortillas into strips.
  11. Serve with lime, avocado, fresh cheese, cilantro, and lightly charred ancho chilli cut into strips.
