Ingredients

  • xxxx noodles
  • 2 cups water with 3 cubes of veggie broth
  • 1 Tbsp olive oil
  • ¼ onion finely chopped
  • 1 minced garlic (1 tbsp garlic powder)
  • 2 green bell pepper diced
  • 1 can coconut milk
  • 2 Tbsp curry powder
  • Sugar snaps
  • Pinch sea salt, pepper
  • Handful cilantro & extra for garnish

Steps

  1. Sauté onion, garlic & bell pepper, stirring frequently until peppers are tender & onions slightly brown.
  2. Add all ingredients to the crockpot.
  3. Stir occasionally for 5-10 min.
  4. Select manual high temperature for 16 min.
  5. When the timer's done, wait for 20 min to release the pressure.
  6. Taste and adjust seasonings, salt & pepper.
