Ingredients
- xxxx noodles
- 2 cups water with 3 cubes of veggie broth
- 1 Tbsp olive oil
- ¼ onion finely chopped
- 1 minced garlic (1 tbsp garlic powder)
- 2 green bell pepper diced
- 1 can coconut milk
- 2 Tbsp curry powder
- Sugar snaps
- Pinch sea salt, pepper
- Handful cilantro & extra for garnish
Steps
- Sauté onion, garlic & bell pepper, stirring frequently until peppers are tender & onions slightly brown.
- Add all ingredients to the crockpot.
- Stir occasionally for 5-10 min.
- Select manual high temperature for 16 min.
- When the timer's done, wait for 20 min to release the pressure.
- Taste and adjust seasonings, salt & pepper.
