Quinoa and cauliflower fritters

Ingredients

  • 200 g quinoa (cooked with ½ L water and a pinch of salt)
  • 200 g cauliflower rice
  • 200 g feta cheese
  • ¼ onion, finely chopped and sautéed
  • 4 eggs
  • Salt and pepper to taste
  • 80 g oats (¾ cup)
  • Chopped cilantro (optional)

Steps

  1. Add the onions and eggs and stir.
  2. Mix in the cooked quinoa, cauliflower, cheese, salt, and pepper.
  3. Add the oats.
  4. Rest in the fridge for 30 minutes.
  5. Cook in coconut oil; fry 3–4 minutes per side.
