Black bean soup

Ingredients

  • 1 Tbsp oil (or sub water)
  • 1 onion diced
  • 1 bell pepper diced
  • ½ tsp each sea salt + black pepper (more to taste)
  • 500g dry black beans drained overnight
    • Or sub for 2 cans black beans
  • 6 cups of water with 3 veggie stock cubes
  • 1 Tbsp nutritional yeast
  • 2 Tbsp cacao powder
  • 4 tsp ground cumin (for smokiness)
  • 3 tsp chili powder (chipotle) or (½ tsp chili flakes)
  • ½ tsp ground coriander
  • ½ tsp paprika
  • 1-2 chipotle peppers in adobo sauce (optional)

Steps

  1. Sauté the onions.
  2. Add the onion and all the ingredients to the crockpot. Leave it working.
  3. Manual cook, high pressure, 35 min.
  4. If we didn't soak the black beans, follow the same steps but with 45 min and an extra cup of water (7 instead of 6).
