Banana oat jam cookies

Ingredients

  • 1 cup rolled oats
  • 2 large bananas, mashed (about 1 cup)
  • 3 Tbsp chia or flax seeds
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • ½ tsp cardamom
  • ½ tsp sea salt
  • 8 tsp jam

Steps

  1. Preheat the oven to 175 °C and line a baking sheet with parchment paper.
  2. In a food processor, pulse the oats until a coarse meal forms — leave some big flakes, don't make flour.
  3. In a large bowl, stir together the oats, mashed banana, chia seeds, cinnamon, cardamom, vanilla and salt. The mixture will be very wet and dense.
  4. Scoop the dough into 10 mounds (they don't spread, so they can sit close together). Press your thumb into the centre of each to make a well, then fill with 1 heaping teaspoon of jam.
  5. Bake for 11-13 min, until slightly firm outside but soft in the middle. Transfer to a cooling rack for 10 min.
  6. If desired, pipe on your favourite nut butter.
