Apple and coconut crumble pie

Ingredients

Crust

  • ½ cup oats
  • ½ cup almonds
  • ¾ cup whole wheat flour
  • 2 Tbsp unsweetened coconut
  • ¼ cup coconut oil
  • 2 Tbsp maple syrup

Filling

  • 4 apples, thinly sliced
  • Berries (mixed or not)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • 1 lemon, juiced
  • Optional: 1 tsp maple syrup

Crumble topping

  • ¾ cup oats
  • ½ cup sugar
  • 1 tsp cinnamon
  • ¼ tsp sea salt
  • ¼ cup whole-wheat flour
  • 2 Tbsp shredded coconut
  • 4 Tbsp melted vegan butter or hardened coconut oil

Steps

  1. Preheat the oven to 175 °C and use a 9-inch (22 cm) pie pan.
  2. Add the almonds, oats and flour to a food processor and grind to a powder. Add the shredded coconut, coconut oil and maple syrup and blend until well combined.
  3. Transfer the mixture to the pan and press into an even layer on the sides and bottom.
  4. In a bowl, mix the apples, berries and spices well, then fill the pie pan.
  5. In a separate bowl, mix the crumble ingredients with a fork.
  6. Sprinkle the crumble evenly over the apples and bake for 60 min, until the apples are soft and juicy.
