Apple and coconut crumble pie

Ingredients
Crust
- ½ cup oats
- ½ cup almonds
- ¾ cup whole wheat flour
- 2 Tbsp unsweetened coconut
- ¼ cup coconut oil
- 2 Tbsp maple syrup
Filling
- 4 apples, thinly sliced
- Berries (mixed or not)
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp cardamom
- 1 lemon, juiced
- Optional: 1 tsp maple syrup
Crumble topping
- ¾ cup oats
- ½ cup sugar
- 1 tsp cinnamon
- ¼ tsp sea salt
- ¼ cup whole-wheat flour
- 2 Tbsp shredded coconut
- 4 Tbsp melted vegan butter or hardened coconut oil
Steps
- Preheat the oven to 175 °C and use a 9-inch (22 cm) pie pan.
- Add the almonds, oats and flour to a food processor and grind to a powder. Add the shredded coconut, coconut oil and maple syrup and blend until well combined.
- Transfer the mixture to the pan and press into an even layer on the sides and bottom.
- In a bowl, mix the apples, berries and spices well, then fill the pie pan.
- In a separate bowl, mix the crumble ingredients with a fork.
- Sprinkle the crumble evenly over the apples and bake for 60 min, until the apples are soft and juicy.
